For some reason over the last several years. My life shattering cosmic truths have been delivered by beautiful women. I first noticed this phenomena in San Pedro when a beautiful Belizean lady told me about growing up on a tropical farm with no electricity. From her wisdom came the breakthrough I needed to come up with my Trucker Diet and lose over 50 pounds 354 to 297 in less than nine months. Life happened, and not long after reaching my objective and getting below three hundred pounds. I decided to celebrate my victory by starting a new career as a writer slash, (I know it sounds like a cliche)… taxi driver. I found sticking with My Trucker Diet hard to do while working graveyard. I did manage to follow it close enough that I didn’t regain more than ten pounds of the weight I’d lost. After a couple years driving taxi I purchased a very expensive food truck which to this day has become a very expensive lawn ornament. It was the same day I bought my food truck and ran out of money that I got a phone call offering me a job hauling cars again.
I jumped like a cat pushed into a bathtub back into the far more lucrative world of long haul trucking. I told myself this was only short term to build up a nest egg. I also told myself this was going to be my chance to continue where I’d left off using my Trucker Diet to lose another 50 pounds. It didn’t work out that way though. I couldn’t get below three hundred to save my life. I’d hit a plateau and was stuck. I considered just starving to achieve my goal. But that would be cheating and I hate being hungry. Besides, I’d already bragged about my Hunger Free Diet and now it wasn’t working!? But I know my Trucker Diet works, I wheedled to myself I’ve lost over fifty pounds using it AND was hunger free doing it. Why wasn’t it working as good the second time? I’d been puzzling about this dilemma for a year and had almost given up on finding a breakthrough when my information showed up… At two a.m. on a Tuesday at Boise Auto Auction, Hand delivered by… Yep, you guessed it a beautiful woman.
Actually, it was Bonny (name changed,) We started talking, I told her about being stuck at a plateau. Turns out she had been dealing with some weight gain also. We commiserated about the hazards of trucking and getting older and trying to stay healthy on the road. “You look great! What have you been doing to stay so fit?” Says I.
“I’ve stopped eating potatoes and grain based food.” She said as she gave her tie down bar a hefty pull, that made the frame of her truck groan in protest.
“You’re on the Atkins Diet?” remembering the diet that my mom had been on in the 80’s that allowed you to eat anything you wanted except carbs.
“No, it's a Paleo Diet program.”
“Oh, you mean like a caveman diet.” I’d heard of Paleo, but had never checked it out, couldn’t get past the vague idea my brain had come up with of hairy un-groomed people running around picking berries, and throwing rocks at rabbits. Then eating them raw. She set me straight…Turns out most Paleos cook their food. Then she handed me a bit of “Paleo” zucchini bread that tasted pretty good and the run down. Paleo Diet, in a nut shell according to Bonny, “no potatoes, no grains, no beans, no processed foods.” She also gave me the name of some books and some websites where I could learn more. I promptly forgot the names of the books and websites but one thing she said had stuck…”No potatoes, beans, or grain based food.” The next morning at the Cottage Cafe in Cle Elum Washington I had an omelet with chili and sour cream, “no hash browns please.” I ordered cottage cheese and fruit instead. Wait a minute you might ask. I thought she said “No beans.” Yep, it’s true, from what I’ve read beans aren’t Paleo. But I’ve found chili to be a staple of most restaurant menu’s and in my opinion it’s a low carb way to add some variety to an omelet or as a side dish.
Dinner on my return trip from Spokane, once again the Cottage Cafe. This time I ordered their awesome chopped steak dinner which comes loaded with fried onions and veggies, including squash and raisins. I also had a salad and substituted cottage cheese for the baked potato. I even remembered to ask my waitress to leave the croutons OFF my garden salad with ranch dressing and chose to ignore the garlic toast which was tough to do because I love garlic anything.
I’ve noticed since I decided to eliminate most carbs from my diet that my vision seems to be a lot clearer. I’m thinking my fuzzy vision after eating had a lot to do with the carbs I used to load up on. So I’ve integrated this mostly paleo diet program with My Trucker Diet to form a two pronged attack. And boy does it work.
Breakfast: french press coffee, fresh fruit and heavy cream sweetened with stevia.

Keep in mind foods like the sausages in this picture are not considered Paleo, however the bacon, as well as grapes and strawberries, are. I don’t mind eating them over the road (hot dogs) though, because they’re so darned convenient, low carb (and tasty)…Just remember not to dose them up with Ketchup which has lots of processed sugar.
