The one and only truckstop in Helena Montana has an excellent Taco Omelet charged me a buck to sub a bowl of Chili. Nice salad bar. One trip 2.95 Not bad.

Spaghetti squash, mashed cauliflower, Pork Roast, sweet potato, with arrowroot gravy. I didn't post any photo's of the Christmas cookies and fudge my mom and sister decided to bring over (not to mention the beer they didn't bring over)...I won't be posting any weight loss milestones for a few weeks I'm afraid.
So, a lot of us including me, have different issues in our lives that create stress. I've decided to spend some time trying meditation. I already find it very helpful to chant Nam-myoho-renge-kyo the Nichiren Buddhist way, as well as pray the Christian way that I was brought up with. I've heard that other forms of meditation (as well as Yoga) can have some amazing health benefits too. Burnie The weather cooperated just enough for me to get home with five minutes left of Christmas 2014 to unload my truck and head for the house. I made this Merry Christmas Video just after midnight Christmas morning while driving through Bozeman Mt. On my way to Portland I stopped and cranked out a few sets on the side of the road. One of my favorite places. What a view. Then dinner with a smile at Jubitz. Three Dollars Off because I bought fuel there. So Kielbasa Smiley face meatballs plate with small drink. 89 centavos.
Well, it says "291" but I promise, before I grabbed the camera it read "290." At any rate I'll take it. I thought a song by Fatboy Slim would suit the occasion... Freight is heavy right now so I'm having to take my 34 off on the road. It could be worse though, Breakfast at The Cottage Cafe. Taco Omelet with Chili (inside). Yum. Don't know why but I've been digging on the Bee Gees this A.m. I always order extra onions with my liver. And I'm Usually dissapointed, The cook at the Gear Jammer Restaurant understands how to do it right. Of course my Liver and Onions wouldn't be complete without some excellent chili with my Salad dumped over the top of course.
Just because I eat hotdogs and chili when I'm on the road. Doesn't mean I do it at home. When I get home, I try to eat more healthy which means Paleo. My sweety picked up a bone in pork roast for $1.98 a pound so I thought I'd surprise her when she got home from work. I like to sear the pork roast in bacon fat (as you can see below) in our awesome Lodge Dutch Oven. Then I dumped a whole bag of cauliflower that was turning brown and needed to be used up, into a stock pot of boiling water for six minutes drained off the water and used half a cup of cream cheese, half a stick of butter, garlic powder, salt and pepper to taste and stirred it up with a wooden spoon. I don't like to blend or pure' the cauliflower because lets face it. It's not going to be mashed taters no matter how much you may want it to be. The wooden spoon leaves chunks of cauliflower that have their own signature texture and tasty flavor. I also seer some of the onions, and carrots in a different pan with bacon fat and celery salt, garlic powder and whatever spices you like. Then, I throw all the veggies plus a box of meat stock and quarter bottle of Joseph Handler "Sweet Red" wine (because it's pork and sweetness won't hurt the flavor one bit.) in the Dutch Oven with the five pound roast for two and 3/4 hours at three fifty. (Click the Photos and they expand.) when the roast is done I take the broth left in the bottom and stir in a three or four tablespoons of Arrowroot flower to make gravy. Arrowroot is the only Paleo friendly flour I've found (so far) that behaves like corn starch. Thickens nice and clear, and is neutral in flavor. Just remember it doesn't like a lot of heat so don't boil the gravy. It should thicken up just before it starts to boil. If it doesn't, add more flour.
Update on Arrowroot, Yes it's Paleo friendly and Gluten Free, however Arrowroot isn't low carb per se, it has about the same amount of carbs as corn starch. Most paleo's would argue it's a better form of starch. Here's a link to a website where They love to talk about this stuff, it's called Marks Daily Apple. so there it is, a good Paleo friendly dinner. So I decided to eat breakfast at the Broadway Flying J restaurant formerly known as "Bairs" in Belgrade Montana. In my opinion they have the best sirloin steak breakfast anywhere. I don't know who their butcher is but they sure know their business. The steak is always over an inch thick tender and blackened on the outside and pink to perfection inside each and every time I eat here. You get two sides, so, even though it was breakfast I order a bowl of chili and a salad. I then like to take my chili and pour it over the top of my salad to create an excellent southwestern style salad. What a great low carb way to start out the day!!! The cool thing is that every Broadway Flying J has the same excellent menu. (I'm not sure if they all have the same butcher.) I've found the waitstaff at all the Broadway Flying J restaurants to be top notch!!! They really give The Old School American Truck Stop Diner a good name. There are Broadway Flying J Restaurants in Belgrade MT, Spokane WA, and Ellensberg WA.
So over Thanksgiving I decided not to fight it and just enjoyed the festivities without doing my Healthy Trucker Diet. And of course Monday morning I was 300 lbs. Well yesterday, Thursday, I wasn't expecting much but my body must like being at its new lighter weight because after being back on My Trucker Diet for only a few days. I'm back down to 294. So, I thought what better song to play than "Skinny Love" by Von Iver. |
