Miso has umami sometimes called the fifth flavor...It tastes GOOD, think chicken soup without the chicken, and it's fermented which means it has probiotics. In order to keep the vitamins and probiotics viable don't boil it. I heat up 16 ozs of water in the microwave and add two tablespoons and mix up. Or go into the truck stop fill your thermos with hot water and add the Miso and shake up for a good tasty broth while on the road. The down side is Miso has to be refrigerated and has quite a bit of salt. Also make sure the bag says "Non-GMO" or Organic. The bag in the photo below doesn't say Non-GMO so Next time I'll be more careful. Since Green Jackfruit is packed in brine the first thing I did was rinse it well. Then Boil until tender. It took 45 minutes. Chopped up an entire bunch of Garlic and a quarter yellow onion (not shown) Five minutes before Jackfruit is finished boiling I add the onions and Garlic to hot pan to caramelize a bit. Dump the caramelized onion and garlic into a bowl and take the now soft Jackfruit, rinse and use a wooden spatula to mash it in the wok. It really does look a lot like tuna (or chicken) when mashed. One Dill Pickle and two to three giant tablespoons of Mayo...I then chopped up half a cucumber from the garden for crunch because I didn't have any celery. I added salt and pepper to taste...Jack Fruit lives up to it's name and has the texture of cooked Tuna or maybe a bit more like Chicken, and is very neutral in flavor...So it's up to You and what You choose to add that's going to give it the flavor. Wish I would have had that celery or green peppers to add for a little more crunch. However Jack Fruit really does live up to its reputation as Jack fruit of all meats, the perfect meat free meat dish. I won't show You the photo of me eating it on a cracker because it's supposed to be Paleo AND Vegetarian. But it makes a great dip or can be eaten straight from the bowl....Here's a song about Tuna Fish...Enjoy!
