Breakfast today was Sausage Bacon and eggs with coffee from McDonalds and I ordered a Sausage Mcmuffin with egg but took away the bread and ate it with a fork. Lunch as you can see was two delicious hot dogs from Loves, add nacho cheese, onions and jalapeños. Dinner tonight was Flying J in Caldwell Idahos amazing half a chicken from the hot case with cold case salad and grapes for a screamin' good deal of just over nine dollars. Today I spent about $20 on food. It's eleven o'clock at night as I type this I'm going to bed without a snack because I'm not that hungry.

First Course was Salad and Chili. Served by Amy who also makes awesome wedding cakes Who also happens to be the baker of the worlds best desserts, pastries, that they also happen to serve at the Cottage Cafe. but I digress. Excellent Chopped Steak cooked to perfection topped with Fried Onions and a Medley of Vegetables seared to a flavorful perfection. 295 is the lightest I've been in almost Ten Years...The changes I've made to my Healthy Trucker Diet are working! Breakfast yesterday the 26th, at the Kopper Kettle in Boise with grapefruit juice and coffee. Then an excellent real crab/shrimp omelet and cottage cheese with tomato slices. It was a bit spendy but it turned out to be the day when I hit a new milestone so I don't mind. I'm also trying to show people I get to eat what I want with my healthy Trucker Diet. So, on the way to Seattle, I decided to swing by the house and clean up, and have Dinner with Terrie. Check out this Awesome low carb healthy trucker meal she put together. Pork Loin with brown gravy, Stir Fried Fresh Veggies and home made coleslaw. Yes! We are celebrating a new milestone as I have dropped down to 295 pounds. That's 9 pounds in less than three weeks. And as you can see I don't starve. I decided to post photo's of what I ate + receipts from one day doing a more Paleo Trucker Diet.10/25/2014 Breakfast at Denny's Exit 40 Next door to the Truck Stop in Tremonton Utah, has what I need for my Trucker Diet.I only ate one meal yesterday. The casino in Pendleton where I planned on having breakfast didn't have their breakfast buffet that I was REALLY looking forward to. I ate late, in La Grande instead, which meant by the time I was hungry again it was bed time and I was too tired to walk over to the convenience store and get a bed time snack. So this A.m. I was raring to go and walked over to the Dennys next door to one of the truck stops in Tremonton. T-bone Steak and Eggs, Denny's let me substitute (fresh cut) fruit and a side salad for my sides. Don't forget to tell your waiter to leave croutons off your salad. Less than $20 for a very large T-bone steak, eggs, fruit, salad and Coffee. I'm almost never hungry, and still lose weight with my Trucker Diet. And yes, I always tip my waiter because they are taxed extra by the IRS based on their food sales. (I've spent plenty of time waiting tables myself.) Paleo Dinner at Flying J in Salt Lake CityO.k. So instead of doing a new blog post I jut added Dinner at the Flying J in Salt Lake City to the same post as breakfast. This way I could show you one day doing a more Paleo Trucker Diet..I.E. A Low Carb Trucker Diet. With the receipts, so you could see the cost rundown on eating a Paleo Trucker Diet. for a single day. At least two of the corporate Flying J's have been letting drivers pick two items from the (Much) healthier cold case instead of the hot case starches. Grapes and a Salad are healthier than say mac and cheese, and mashed taters... The Flying J discounts the cold case items in order to charge the same price for the dinner anyway...Thank You Flying J for giving a great value and helping us drivers do our job better and stay healthier. So it cost me around thirty dollars today eating very tasty Paleo restaurant and truck stop deli food. Maybe slightly more expensive than say eating fast food. Depends on the driver, but the savings in a drivers health add up over time. Also, I didn't grab a snack of say a banana or apple before bed but I'm not feeling hungry.
Stopped at the Flying J in La Grande Or. for brunch I ordered the salisbury steak with no bread or potato and they let me substitute a bowl of chili, added a trip to the excellent soup salad bar for $2.99 Call me weird but I like to pour my chili over the top of my salad. Keep in mind this chili has beans, which are NOT Paleo, also the gravy may have some corn starch in it but it's still a great low carb meal and a perfect lunch for my Trucker Diet. I deleted the picture of my salad with chili dumped on top, because SOME people kept telling me it looked gross. It sure did taste good though. Less than $12. Are you kidding! Low carb and tasty, in my opinion the perfect meal for my Healthy Trucker Diet. According to Alpha Galileo.org "Low-carbohydrate diet has a good effect not only on blood glucose, but also on physical functions, bodily pain and general health, according to a diet study including patients with type 2 diabetes."

How cool is that!? I've found found low carb diets like Paleo and Atkins both work well Especially, when coupled with my Trucker Diet. Which I've updated and you can check out HERE.
Getting my DOT Physical and dealing with new C-pap Regulations C-pap adventures in Portland Oregon.10/17/2014 My DOT physical is coming up and they changed the rules and one of the changes is Doctors must be certified in order to do the physical. Well, my regular doctor at home isn't certified. I thought since I was in Portland why not walk over to First In Health clinic there at Jubitz. The receptionist told me they have an account set up with the company I work for. This is great because I don't have to pay out of pocket and get reimbursed later. The Dr. at First In Health was happy to talk to me before the actual physical and tell me the scoop on what I'd need in order to get my DOT medical card. Turns out since I have a C-pap machine (actually I have two) new DOT reg's require that I needed to get a print out of at least a 30 day period. On this printout I need to show that I've used my machine at least 4.75 hours per day avg for that 30 day period.
Well, of course I didn't have the print out. Also, since I'd bought my last two C-pap machines on Craigslist used and out of pocket (thanks to my ever weakening medical insurance and a six thousand dollar deductible.) my used C-pap machine didn't have the data card in it. The Doctor there at First In Health recommended Mill Plain Medical across the river in Vancouver Wa So, I took Radio Cab over to Mill Plain Medical, (Cab ran me around 27 dollars with tip one way), to talk to area expert on C-pap's Russ Thurgood. Well, thank goodness for Russ. He was able to find the data stored on the machine even without the card and for only around five bucks set me up with a new card. End of story right? Nope, turns out since I have two C-pap's one for my truck and one for the house, that the average I was showing for the last 30 days on that particular C-pap was less than 4.75 hours per day. Well, now my next step is... When I get by the house in Tri Cities is to see if my other C-pap has its data card and get someone to run a printout of it. I may end up just taking it with me in my truck until I get back to Portland. Then hopefully, I will be able to get my DOT physical done because time is starting to run out. |
