What is a Glycemic Index (GI) and what does it mean you may ask. The glycemic index, is a system to measure how quickly or how slowly a food causes your bodies blood glucose level to rise. Pure glucose (sugar) scores 100 on the GI. It's pure sugar and of course, makes your blood sugar raise up the fastest. On the other end of the spectrum you have stuff like chickpeas (hummus) which only score a six on the G.I. because they cause your blood sugar level to raise very slowly. If You're an endurance athlete then you may want foods with a high GI, because your body has to supply energy to your muscles. If you're trying to lose weight, are diabetic, or someone that doesn't get much exercise like most of us truckers, then you may want to stay away from foods with a high GI. There's more to staying healthy than just eating foods with a low glycemic index though. According to a Harvard Health Publications article, there are foods that have a very high GI Like Watermelon, which score an eighty, or the lowly peanut, which scores a 50; yet, don't cause your blood glucose level to rise much at all. This is because they posses very little carbohydrate per serving. In order to make good food choices, You need to know how quick the glucose enters the bloodstream, and how MUCH glucose (carbohydrate) it has in total per serving. These two factors together, are called the glycemic load. You find the glycemic load "by multiplying the grams of a carbohydrate per serving, by the glycemic index, (GI) then dividing by 100. A GL of ten or below, is considered low. Twenty or above, is considered high." That Lowly peanut that scored a sky high fifty on the GI, on the GL only scores a one and a cashew only scores a three! So, by all means driver. Instead of chowing down on something like say... raisins, which have a GL of 28. Your body doesn't produce this stuff, so If I can only have one store bought vitamin in my life (especially in the wintertime) then this is the one.
So, why not take half an hour at lunch or when you wake up in the morning driver and learn coding. I found a website (the Khan Academy) that was setup by one of the smartest people in the world to help other people learn valuable math and science related stuff for free. I was amazed, and made it through my first hour of learning some Java Script, without throwing my laptop.

One of the perks of driving long haul is being able to spend your down time in places that you'd never see, or normally would have to go on vacation and spend money to see. I got to spend an extra day in Lethbridge AB Canada. Glad I invested in a Nikon camera a number of years back. You certainly don't need an expensive camera to take excellent photo's. The plains of Alberta are amazing in the fall. Blue sky and moisture laden clouds taking turns. I felt fortunate I didn't get rained on during my hike. Just for fun I shot this of some high prairie clover. I was pleasantly surprised to be able to get this close up photo with my 55-200 telephoto lens.

I had a chance to drive for a week with a driver that had retired Army, and he would play this song to keep on truckin'. So I posted it for Sam. It's quite catchy. I'm not affiliated with the Army in any way. This advertisement is the only example of the song I could find online. One of the hardiest plants growing in the arid environment of the tropics is called the Moringa Tree, aka The Drumstick Tree. Originally from the foothills of the Himalayas. The Moringa can now be found all kinds of places even here in the USA. Except you have to use a greenhouse; so here, it's a seasonal crop. It turns out that this plant when it is dried has more nutrients, amino acids, and vitamins than just about anything growing. Like 4 times the vitamin C of an orange by weight, 8 times the potassium in a Banana, and 18 times the iron that's found in spinach. It is, according to many the ultimate super food. It's even being planted in drought stricken areas because it grows so well and is so nutritious for both children and adults. I bought this powder from a market in Spokane for $60 dollars for a pound but you can find it a LOT cheaper online. Here's a good source. The farmer says this stuff is so potent that you might not want to take it close to bed time because it will keep you awake. I take it as a delicious meal replacement when I'm in a hurry in the morning, it has a faint green and nutty taste. Here's a link to a website that tells all about this amazing plant.

Moving forward. I bought a clothing rack today at walmart to hang Tie Dye on... It's been over a year since I took this photo of an Omburger (Outstanding Mushroom Burger) that an old friend Mark Nelson and I whipped up after a night of commiserating at Dennys. I thought by now after a year driving big truck that I'd have enough money saved up to start Omburger Restaurant. I still have the food truck and the hot dog cart sitting in the backyard. A lot has happened in the last year I've gotten a business license and a food handlers permit However things keep changing while moving forward (slowly). The vision I have always had for Omburger involving healthy tasty food I wanted Omburger to be fun. I had a vision of wearing and selling tie dye while serving healthy (vegetarian) food.
I've never bragged about Petro's Food before now, that I can remember. But, If you're traveling through Wells Nevada. You might want to stop at the Petro Travel Center and fill more than your fuel tank... I was blown away by the salad bar and the authentic Posole...Well mostly authentic because the waitress said the chef had used pork instead of tripe. It worked out well though. He used all the same spices as the traditional Posole and it was delicious. The Louisiana White Fish was lightly breaded, flavorful, and tender. A low carb meal fit for a king. Only 14.94 for Louisiana White Fish, coffee, soup and salad... I kept it low carb and subbed cottage cheese for the starch.
