Since Green Jackfruit is packed in brine the first thing I did was rinse it well. Then Boil until tender. It took 45 minutes.
Chopped up an entire bunch of Garlic and a quarter yellow onion (not shown)
Five minutes before Jackfruit is finished boiling I add the onions and Garlic to hot pan to caramelize a bit. Dump the caramelized onion and garlic into a bowl and take the now soft Jackfruit, rinse and use a wooden spatula to mash it in the wok. It really does look a lot like tuna (or chicken) when mashed. One Dill Pickle and two to three giant tablespoons of Mayo...I then chopped up half a cucumber from the garden for crunch because I didn't have any celery.
I added salt and pepper to taste...Jack Fruit lives up to it's name and has the texture of cooked Tuna or maybe a bit more like Chicken, and is very neutral in flavor...So it's up to You and what You choose to add that's going to give it the flavor. Wish I would have had that celery or green peppers to add for a little more crunch. However Jack Fruit really does live up to its reputation as Jack fruit of all meats, the perfect meat free meat dish.
I won't show You the photo of me eating it on a cracker because it's supposed to be Paleo AND Vegetarian. But it makes a great dip or can be eaten straight from the bowl....Here's a song about Tuna Fish...Enjoy!
