So due to weather I ended up stuck in Caldwell Idaho friday and Saturday. There was only one restaurant around so my dinner both nights was steak and all you can eat shrimp...Nothing wrong with that, except the all you can eat shrimp were breaded and boy did I eat a lot of them. So, It messed up my "low carb diet". The bigger diet mistake I made, was the 2 Mikes Hard Lemonades I bought at the hotel lobby and that I decided to guzzle just before bed around midnight.
However I'm back in the saddle When I got home Sunday I cooked a Paleo Pork Loin Dinner with onions, carrots, and sweet potatoes. I used arrowroot flour as a thickener for the Paleo gravy. Remember if you use arrowroot as a thickener it doesn't like too much heat so just bring it to a simmer (not a boil) as you stir. It thickens up clear and real nice and is neutral on flavor.
Breakfast was four large chicken sausage links from Costco and Lunch yesterday was at Jubitz Truck Stop Deli. Chicken with Gravy and meatballs and one kilbasa. Dinner was a cup of decaf coffee with whole milk and stevia.
Been trucking since 96. My main interest is having a good healthy life.
