Miso has umami sometimes called the fifth flavor...It tastes GOOD, think chicken soup without the chicken, and it's fermented which means it has probiotics. In order to keep the vitamins and probiotics viable don't boil it. I heat up 16 ozs of water in the microwave and add two tablespoons and mix up. Or go into the truck stop fill your thermos with hot water and add the Miso and shake up for a good tasty broth while on the road. The down side is Miso has to be refrigerated and has quite a bit of salt. Also make sure the bag says "Non-GMO" or Organic. The bag in the photo below doesn't say Non-GMO so Next time I'll be more careful.
